Chia Seed & Matcha Powder Pudding Recipe – Keto!

Once upon a time, I read some article saying that match powder was healthy. I have no idea where I read that article, but I did a quick Google search and found this article that NBC News wrote that seems to explain it well. keto matcha powder chia seed weight loss

Anyways, I read that it was healthy, so I bought some on Amazon. (If you’re wondering, this is the exact brand I use: https://amzn.to/2JJmMsw). I did some searches and came upon a recipe for Chia Seed Pudding with Matcha Powder. I tried it out and, since making some changes of my own, have come to enjoy it as a pretty healthy dessert. Now, there are a few things you need to keep in mind when making this recipe:

  1. If you’re going out after eating this, make sure to check your teeth because the little chia seeds can get stuck and I’m willing to bet you don’t want little black seeds wrecking your gorgeous smile.
  2. Matcha Powder can be kind of messy to measure. If you’ve ever baked with cocoa powder, it’s kind of like that. If you’re not careful, the powder will go everywhere. Do your best to measure the matcha powder inside of the container it came in and *carefully* add it to the rest of the ingredients.
  3. Do not eat this expecting it to be the same consistency as your typical pudding. This pudding will get it’s consistency from the “gel” that forms around each chia seed. Is that a technical term? I have no clue, but it’s the best way for me to describe it. This pudding will be lumpy-ish and be full of texture, but it may take some getting used to.
  4. Matcha Powder is typically used for making tea, so remember this when you start eating your pudding. I find that the pudding is just sweet enough to help curb any cravings my entire mouth full of sweet teeth may be is having.

Added bonus – all of the ingredients in this recipe go along with the keto way of eating. If you’re keto, that’s great! If not, I’m willing to bet you’ll still enjoy it!

Chia Seed & Matcha Powder Pudding

One of my go-to sweet desserts that goes along with the keto way of eating.

Ingredients

  • 6 TBSP chia seeds
  • 2 cups unsweetened almond milk
  • 1 TBSP sweetener we prefer Pyure Brand Stevia
  • 1 TSP vanilla extract
  • 1 TBSP matcha powder
  • Fresh Whipped Cream optional for serving

Instructions

  1. Into a glass bowl, measure out all of your ingredients.

  2. Use a whisk to carefully combine all ingredients until there are no lumps of matcha powder left.

  3. Put a lid on the bowl and place into the refrigerator for at least 24 hours.

  4. Serve, while cold, in small bowls. 

  5. Optional: I like to top my pudding with some fresh whipped cream. Not only does it increase the fat (good for keto), but it makes the pudding extra creamy.
